This stunning Santoku chef’s knife was made in collaboration with Blenheim Forge, the Peckham based steel workshop of artisans Jon Warshawsky, James Ross-Harris and Richard Warner. It is also the first ‘EDITION by Another Country’, a new initiative that celebrates the process of creating through the designing, collaborating or commissioning of small batch, hand-produced objects for every day use. The objects will only be available for purchase in the store.
The Santoku knife has a very versatile shape, and as such, is a great starting point for any set. It has the ability to tackle a multitude of ingredients, and is a welcome addition to any kitchen. The blade is made with a Japanese Blue Paper steel core and cladded with folded iron, and is married to a Wa handle made from either Walnut or Yew locally sourced from our workshop in Dorset. The knife features a solid copper ferrule.
The core of blue paper steel is encased in soft unalloyed iron, this traditional Japanese lamination method, unlike most commercial kitchenware, is designed to be easily reground so that the blade can perform until it’s worn down to almost nothing. Japanese Blue Steel no.2 has a hardness range or HRC 60/63 yielding remarkable performance.
